By now it should be no surprise that upping your nutrient density is necessary for deep levels of healing. One of the top AIP bloggers, Mickey Trescott, just game out with a cookbook completely dedicated to it. One way to increase your nutrient density (aside from eating grass-fed, pasture raised meats and eggs, and wild caught seafood), is to increase the variety of veggies you’re eating. Vegetables are full of vitamins and minerals and support gut diversity, as well as contain antioxidant and anti-inflammatory properties. What’s not to love?

I’m hosting Eat the Rainbow week to challenge all of us to eat more veggies. Anyone who joins is entered to win a copy of Mickey Trescott’s latest cookbook, The Nutrient Dense Kitchen.
