Chocolate Covered Banana Pops
these delicious, unsweetened popsicles are exactly what you need for a sweet treat!

Ingredients
1.5
cups
coconut butter
1/3
cup
cocoa powder
use carob powder for AIP

ripe bananas

tbsp
coconut oil
Instructions
peel and cut all the bananas in half
place each half on a popsicle stick and freeze on parchment for approximately 2 hours
put a sauce pan on the lowest heat possible
add in coconut butter and let it slowly melt, whisking every minute or so
once melted, whisk in the cocoa or carob powder
place the banana in the sauce pan and use a spoon to fully coat it with the mixture
place on a cookie sheet and add any toppings you might like (see post for ideas)
continue with each banana
place in the freezer for 15-30 minutes and enjoy!
Notes
If your coconut butter overheats and starts to get clumpy, you can add 1 tbsp of coconut oil to the mixture to thin it out
