Nightshade-Free Beef Stew (With a Secret Ingredient!)

This Hashimoto's friendly beef stew has less than 10 ingredients and uses one pan. It has a depth of flavor using thyroid friendly ingredients that pack a punch. Yum!

Ingredients
  

  • 2.5 lbs beef chuck cubed
  • 2.5 lbs beef chuck cut into 1-inch pieces
  • 1 lb celery root* cubed
  • 1/4 teaspoon salt adjust to taste
  • 3 cups beef broth or bone broth
  • ¼ cup tart cherry juice
  • ¼ cup coconut aminos
  • 8 garlic cloves whole
  • 1 yellow onion sliced
  • 3 sprigs fresh rosemary
  • 4 large carrots peeled and sliced

Instructions
 

  • Add All Ingredients to Crockpot: Put beef, veggies, seasonings and herbs in the crock pot
  • Add the liquids until beef and veggies are nearly covered.
  • Cover the crock pot and set on low for six hours, stirring occasionally. This slow cooking process ensures melt-in-your-mouth beef.
  • Taste, Adjust & Serve: Remove the rosemary sprigs, season with additional salt if needed, and serve warm.

Notes

*celery root, white sweet potato, or russet potato can all be used here (though russet potato is a nightshade!)
Low Histamine: If you need a lower histamine version of this recipe, I recommend cooking it in the instant pot and using a homemade vegetable or chicken stock in lieu of store bought. 
Instant Pot: you should be able to easily make this in the instant pot, but I haven't done it yet. I'll update once I have those instructions!
