Combine plantains, cherries, and coconut flakes in a bowl and stir
Melt coconut oil in a large dutch oven on low heat or in microwave and add in garlic powder, onion powder, coconut aminos and sea salt, whisk to combine
Add 1/2 of the snack mixture to the liquid and stir to combine
Add the second half of the snack mixture and stir well until everything is evenly coated
Spread the mixture in a roasting pan or cookie sheet and place it in the oven for one hour, stirring every fifteen minutes
Set snack mix aside to cool for 10-15 minutes

Stores well in an air tight container for 10-14 days!
