Paleo Snack Mix

Ingredients
  

  • 1/4 cup + 2 Tbsp coconut oil
  • 4 cups plantain chips
  • 4 cups coconut chips
  • 1 cup dried cherries or craisins optional
  • 1 tbsp garlic powder
  • 1/2 tbsp onion powder
  • 3 tbsp coconut aminos
  • 1/4 tsp himalayan sea salt

Instructions
 

  • Preheat your oven to 250 degrees
  • Combine plantains, cherries, and coconut flakes in a bowl and stir
  • Melt coconut oil in a large dutch oven on low heat or in microwave and add in garlic powder, onion powder, coconut aminos and sea salt, whisk to combine
  • Add 1/2 of the snack mixture to the liquid and stir to combine
  • Add the second half of the snack mixture and stir well until everything is evenly coated
  • Spread the mixture in a roasting pan or cookie sheet and place it in the oven for one hour, stirring every fifteen minutes
  • Set snack mix aside to cool for 10-15 minutes

Notes

Stores well in an air tight container for 10-14 days!
