Strawberry Basil Chia Seed Jam

This quick, 3 ingredient, easy recipe is the perfect topping to coconut yogurt, ice cream, or toast!

Ingredients
  

  • 1 lb ripe strawberries stems removed and chopped if the berries are large
  • 1 tbsp honey optional
  • 2 tbsp chia seeds (AIP REINTRO)
  • 1 tbsp fresh lemon juice optional
  • 2 tbsp fresh basil chopped

Instructions
 

  • Place berries in a saucepan over medium-low heat to break them down (the time will vary based on berry size/type but approximately 5-10 minutes).
  • As the berries soften and juices release, use a wooden spoon to help break up the berries a bit more
  • Next, add in the chopped basil leaves
  • Add in lemon juice and sweetener, if using
  • Add in the chia seeds and stir to combine
  • Transfer to a jar or storage container then place in the fridge

Notes

You can store this jam in the refrigerator for approximately 1-2 weeks. Keep in mind, it is not preserved like regular jam so it won't last as long. You can also put it in the freezer and thaw to enjoy at a later time!
