You may think getting started on the SIBO diet means you’re destined for bland food, but I’m here to tell you that’s not the case! This midwest gal has put together a delicious, nutrient-dense,  hardy, SIBO-friendly stew that may just become a new staple in your healing process.

The recipe takes about an hour and 30 minutes and prepares enough stew for 4 people. You can add it to a bowl of cauli-rice (or regular rice, if that’s your thing) to make it stretch.


Ingredients:

½ Tbsp Fatworks duck fat

1 lb grass-fed (if possible) beef stew meat

1 large celery root, cubed

2 medium rutabegas, cubed

1 leek, green leaves only, roughly chopped

3 large carrots, sliced

8 cups of beef bone broth

½ tsp dried rosemary

½ tsp dried oregano

1/8 tsp salt (more to taste)

2 tbsp fresh parsley for garnish


Method:

Preheat oven to 350 degrees

Heat duck fat on medium-low in dutch oven

Add beef and let brown for about five minutes, stirring halfway through so most sides are browned (make sure you keep this at a lower heat so that the beef doesn’t get tough)

Add rutabaga, celery root, leak leaves, and carrots

Pour in bone broth until it has barely covered all of the ingredients, stir

Bring to boil

Place in oven for one hour

Serve with fresh parsley sprinkled on top
