Paleo Bone Broth Pho (with AIP Modifications)

My husband and I used to go on Pho dates all the time and I was sad going paleo meant I couldn’t have it anymore. WRONG! Below is a kickass recipe you’ve gotta try. If you want to make it AIP, use coconut oil instead of sesame and don’t add jalapeños or bean sprouts.


Serves 3

Ingredients:

10 Cups of my easy-peasy veggie bone broth

2 Cups veggie noodles (I had zucchini and my husband had sweet potato)

1/2 lb raw shrimp

1 small shallot

2 large cloves of garlic

1 cup of sliced mushrooms

3 teaspoons of sesame oil (sub coconut oil if AIP)

1 tsp fat (coconut oil, ghee or duck fat)

Toppings:

Bean sprouts (omit if AIP/Paleo)

Lime, sliced into wedges

Cilantro leaves

Thai basil

1 jalapeno, sliced (omit if AIP)

Method:

Heat up bone broth in pan until it’s boiling (note: this is important if you want the noodles to cook in your bowl)

Sauté shrimp in cast iron skillet with one clove of minced garlic

Spiralize sweet potato or zucchini into noodles (or purchase pre-spiralized noodles)

Thinly slice shallot and remaining clove of garlic lengthwise and sauté in a separate pan until crispy (I used Fatworks duck fat for this)

Place noodles in the bottom of a bowl

Add 1 teaspoon of sesame oil/bowl

Add shrimp and raw mushrooms

Fill bowl with 2-3 cups of boiling bone broth

Add in crispy shallots and garlic

Add your toppings of choice

Enjoy!
