I had never purchased endive lettuce before and now I’m obsessed with it. It’s crispy, fresh, a tiny bit bitter, and makes a perfect salad. Plus, it’s absolutely gorgeous — makes my job photographing food a lot easier. If you omit the walnuts this is an AIP compliant salad and a perfect companion to any meal. My husband and I made two butcher box steaks to go along with it and had plenty of leftovers for lunch the next day.
ENDIVE APPLE SALAD WITH GREEN GODDESS DRESSING RECIPE
For the salad:
1 head of curly endive lettuce, torn (or cut) into bite size pieces
2 cups of thinly sliced brussel sprouts
1/2 cup of thinly sliced green apple
1/4 cup of walnuts (OMIT IF AIP)
For the dressing:
1 cup parsley, chopped
2 tbsp chives, chopped
2 tbsp lemon juice
1 medium garlic clove
3/4 cups of extra virgin olive oil
Method:
In a large salad bowl, lay down all the endive lettuce and top it with the brussel sprouts, apples, and walnuts
Next, combine all the dressing ingredients in a magic bullet or blender
Top the salad mixture with the dressing and toss
Consider adding a bit more apples and walnuts for presentation before serving
Top with grilled steak, chicken or salmon
