Since I’ve started working with 1:1 nutrition clients I’ve realized what a strong need there is for really simple AIP meals. Many of you are busy raising beautiful children, kicking ass at work, trying to show up for the people you love, and also trying to manage your health. I have clients that range from people who literally cannot get out of bed to those who are running around living their lives and feel completely zonked by the time they get home. Most of you don’t have time for elaborate meals and cooking from scratch.
Eating balanced, healthy meals may not feel like something you’re capable of doing right now.. but I have news for you, it totally can be if you commit to it! One-pan meals, the crock pot or instant pot, and just a little bit of meal prep can help make eating healthy more manageable.

This creamy AIP chicken and rice casserole takes about 20 minutes to throw together (honestly, probably less) and then you just pop it in the oven and get other things done around the house while it cooks.. or you can just sit on the couch and watch friends or something.. I’m not judging!
I know you might be going through a lot right now with trying to manage your health. Notes: buying riced cauliflower and pre-cut broccoli at trader joe’s will make this go much faster! As will pre-chopping onions, celery and garlic on the weekend and storing them in the fridge for the weeknight meal. This stores in an air-tight container for up to 5 days and is easily reheated on the stove or in the microwave at work. I prefer my cauliflower rice al-dente, but if you prefer it softer keep it in for an extra 15-20 minutes.
Ingredients:
1 tbsp olive oil
3 cups of cauliflower rice
1 cup of diced celery
2 tbsp minced garlic
1/3 cup of chopped onion
1.5 cups of chicken bone broth
3/4 cups of full fat coconut milk (I like this brand because it doesn’t have added gums/thickeners)
1.5 cups of broccoli florets, chopped into small, bite size pieces
3 boneless chicken thighs, chopped into 1 inch pieces
1/8 tsp of sea salt
Instructions:
Preheat oven to 350 degrees
Grease pan with 1 tbsp of olive oil
Add cauliflower rice, celery, garlic, onion and broccoli florets to the casserole dish
Add bone broth, coconut milk, and all purpose seasoning, and stir until all ingredients are mixed together
Place raw chicken in dish and stir again
Cover dish with tinfoil and place in the oven for 50 minutes.
