AIP SPINACH ARTICHOKE CHICKEN RECIPE (serves 4)
Ingredients:
2 TBSP minced garlic
3-4 lbs of chicken (I prefer thigh but breast works too!)
2 (14 oz cans) artichoke hearts in brine, drained
3 cups of fresh spinach
1 cup of full fat coconut milk
1 cup of diced onion
1/8 tsp sea salt
3 Tbsp nutritional yeast
1 tbsp arrowroot powder
1 tsp coconut aminos
Method:
Combine garlic, chicken, artichoke hearts, coconut milk, onion, salt, nutritional yeast, and coconut aminos in the crock pot and stir it so everything is coated in the coconut milk mixture. Try to stack some of the onion, garlic and artichoke hearts on top of the chicken to help it absorb the flavor
Turn crock pot to low and cook for 5-6 hours
30 minutes before you’re ready to serve, use two forks to shred the chicken into smaller pieces. Add the arrowroot starch and spinach to the crock pot and stir to combine everything.
Serve over cauliflower rice or zucchini noodles
