This is my favorite thing I’ve made lately. The lime and coconut pair together well and the collagen rich, micronutrient-dense bone broth give this a nutritional punch. There are only 9 ingredients so it’s easy to whip this thing up in under 25 minutes! Enjoy!
Ingredients:
5 Cups of bone broth
1 TBSP garlic sliced thinly
1 Tsp minced ginger
1/3 cup of thinly sliced red onions
Two chicken thighs
1 bunch of broccolini, thinly sliced
1/2 medium sized lime
1/2 cup of full fat coconut milk (I prefer Aroy-D)
Sliced basil to garnish
Method:
Add chicken, bone broth, garlic, ginger and onions to a pot and bring to a boil
After 10 minutes, remove chicken thighs from water and place on a cutting board
Add broccolini to pot and reduce to a simmer
Using two forks, hold the chicken in place while using the second fork to shred the chicken into thin pieces (you can also just cut it if you prefer)
Add back into the pot and continue to simmer for about 5 minutes
Squeeze the juice out of the lime into the soup
Add 1/2 cup of coconut milk
Stir to combine
Serve hot and garnish with fresh red onion and lime
