AIP - Duck Fat Hash


What’s better than an AIP duck fat breakfast hash? Hm, nothing.  

I’m loving Fatworks right now. I used to be a vegan, so choosing brands that support humanely raised animal agriculture is important to me. I go with Fatworks because they support family farmers who use sustainable, humane and environmentally friendly practices.  They’re quick to respond when you reach out to their customer service team and, bonus, they’re a Colorado company. That means the duck fat doesn’t have to travel too far to get to me. Yay!

Basically, they’re overly processed, provide us with more omega-6 than our bodies need, and those things lead to inflammation.  No bueno for those of us with an autoimmune disease! The idea is to reduce inflammation, remember? 

Okay, so, you’re AIP and you think breakfast is a bummer? I don’t blame you. Before I added eggs back into my diet I was pretty sad at breakfast, too. This hash is not only DELICIOUS but it saves well and pairs great with Mickey’s patties from the Autoimmune Paleo Cookbook.

2.5 cups peeled and cubed sweet potatoes

1.5 Tbsp duck fat, separated

½ cup onions

1.5 Tbsp garlic

1 cup sliced mushrooms

3 cups of kale

1/8 tsp salt



Preheat oven to  400 degrees

Melt 1 Tbsp of ghee in cast iron skillet

Toss sweet potatoes in duck fat, sprinkle with salt and toss it in the oven for 30 minutes, stirring halfway through

Broil sweet potatoes for 3 minutes until they start to brown on the edges

Stir and repeat for another 3 minutes


In another skillet, turn heat to medium and melt ½ Tbsp duck fat

Add onions and sauté 1-2 minutes

Add mushrooms, kale and garlic and sauté for 3-5 minutes or until kale and mushrooms reach your desired tenderness

Salt to taste

Combine sweet potatoes with veggie sauté

Serve with an AIP compliant three-herb beef patty, an over easy egg and/or some bacon
