Anyone up for some butternut squash bison soup? BSB soup is loaded up with collagen, gelatin, glucosamine, amino acids, and a slew of vitamins and minerals. Bonus? It’s, like, super easy to throw together. Here’s the deal:
Ingredients
1 tablespoon coconut oil
1 medium onion, diced
4 tablespoons of garlic, minced
1 lb ground bison
8 cups of bone broth (recipe here)
4 cups cubed butternut squash (fresh or frozen)
1 cup sliced carrots
2 cups chopped spinach
Method:
Sauté onions in coconut oil until translucent.
Add ground bison to onions and break apart while stirring frequently.
Add garlic to bison and onions and stir together, cook until garlic is fragrant.
Add bone broth, butternut squash and carrots and bring to boil.
Once boiling, turn heat to low and cook for 30 minutes or until butternut squash and carrots are tender.
Add spinach and serve it up.
(For low FODMAP skip the garlic and onion, half the amount of squash, double the amount of carrots, and try adding leak leaves and extra sage.)
