Have you ever had a chocolate covered banana pop? If not, you’re missing out! I first got the idea when I visited my sister a few summers ago. She would make these for her kiddos sans chocolate. I thought to myself, “I bet I could give these an upgrade, but how can I add chocolate while still making them AIP and paleo?” Welp, I finally figured it out. Now these Chocolate Covered Banana Pops have just my world. I’ve been looking for a healthy “popsicle” snack now that summer hit, and decided this would be as good a time as any to create my own version of my sister’s pops.
How to make chocolate covered banana pops:
These only have 4 ingredients so you don’t have to do much to prepare, okay!? All you do is melt some ingredients, whisk in some cocoa powder, dip those sweet little bananas, and throw them in the freezer. They’re as delicious as they are simple.
How do I make chocolate covered banana pops Autoimmune Paleo compliant?
I get asked all the time about AIP desserts. I find that people on the autoimmune paleo diet sometimes rely to heavily on dessert items to keep them compliant, without consider how blood sugar will impact their overall health. When we eat a lot of sugar, it puts us on an energy roller coaster. Since a lot of my autoimmune clients also have some sort of gut dysbiosis like SIBO and candida, going heavy on the treats can actually make them feel worse.
I love this particular recipe because it’s totally naturally sweetened. Instead of using actual chocolate chips, I use coconut butter and mix it with a chocolate-y substance. If you’re on the AIP diet, making these with carob powder instead of cocoa powder makes them AIP compliant.
One of the best parts is that coconut butter is a healthy fat, which helps keep blood sugar stabilized when eaten with something sweet like fruit. Honestly, these frozen banana pops are a win/win.

The best part about this recipe is that it only uses 3 ingredients
Ripe bananas (use unripe if you are low FODMAP)
Cocoa or Carob powder (carob for AIP, half the cocoa powder for low FODMAP)
Coconut butter (a healthy, AIP compliant fat)

How to give your chocolate covered banana pops an upgrade:
If you want to make these extra cute and tasty, consider adding the following toppings as the chocolate is hardening:
Toasted coconut flakes
Flakey sea salt
Crushed almonds (not AIP)

Chocolate Covered Banana Pops
these delicious, unsweetened popsicles are exactly what you need for a sweet treat!
- 1.5 cups coconut butter
- 1/3 cup cocoa powder (use carob powder for AIP)
- 4 ripe bananas
- 1 tbsp coconut oil
peel and cut all the bananas in half
place each half on a popsicle stick and freeze on parchment for approximately 2 hours
put a sauce pan on the lowest heat possible
add in coconut butter and let it slowly melt, whisking every minute or so
once melted, whisk in the cocoa or carob powder
place the banana in the sauce pan and use a spoon to fully coat it with the mixture
place on a cookie sheet and add any toppings you might like (see post for ideas)
continue with each banana
place in the freezer for 15-30 minutes and enjoy!
If your coconut butter overheats and starts to get clumpy, you can add 1 tbsp of coconut oil to the mixture to thin it out
